French Guiana: An Exotic culinary trip.

French Guiana is a French department, located in South America (next to Brazil), in the middle of the Amazon rain forest.

Most of the Guianese people are descendants of African slaves. Guianese Creole is a dialect invented by slaves to communicate with each other, but the official language is French. 

In the fields, they used to collect sugar cane, cotton and coffee.

Today the population is MULTICULTURAL, a melting pot of Haitians, Dominicans, Peruvians and many more…

In the context of the #WorldFoodDay (the 16th of October), we have to find new sustainable ways to produce, consume and recycle. Therefore, through this little list, I invite you to discover some delicious, eco-friendly dishes consumed by the inhabitants of French Guiana. 

1. COLOMBO

Colombo is a dish that comes from India. It is made of curried pieces of pork accompanied by potatoes and white rice. People consume it for special occasions.

2. BAMI

This dish comes from Java, an island in Indonesia. It is prepared with Spaghetti coated in soy sauce, fricassee chicken with a little spicy liver and sweet and sour cucumbers. 

3. BANANE PESÉE

This little wonder comes directly from Haiti, an island in the Caribbean sea. It is made of boiled banana with fried pork accompanied by “piclise” (salad).

To brighten up your day, let me give you the recipe for a typical Guianese sweetness that you can do at home:

The shape of this dessert is similar to the one of mullet eggs, hence the name in Creole.

INGREDIENTS FOR 10 SERVINGS :
30 mins of prep

Cream

  • 1 L semi-skimmed milk
  • 100 g flour
  • 200 g sugar
  • Four yellow eggs
  • One spoon of vanilla
  • 1/2 spoon of cinnamon
  • One lemon zest

Dough

  • 1 Kg flour
  • 1 L water
  • One sachet of baking powder
  • 50 g butter, lard or margarine
  • One pinch of sugar
  • One pinch of salt
